I made some treats to enjoy and share with my co-workers this week. One of my all-time favorite Christmas goodies are my mom's peanut butter balls. They are very similar to buckeyes but she puts a little Rice Krispie cereal in them to add an extra crunch. She would make lots of treats before Christmas and freeze them to save time during all the hustle and bustle for Christmas parties and on actual Christmas day. My brother loved the peanut butter balls so much he would sneak them from the freezer and eat them frozen. One year she grabbed the tin out of the freezer and there were only about 3 or 4 peanut butter balls left! I made
peanut butter "buckeye" pretzel bites which seemed extremely similar to my mom's peanut butter balls but included the salty goodness of pretzels. I already had all the ingredients except the pretzels so this was on the cheap side. They were easy to make but a little time consuming. You have to roll out all the peanut butter to smash between the pretzels, freeze it to set, then melt chocolate, dip the peanut butter pretzels, and then chill to set again. I added more powdered sugar but I still think more would have been better. Here's a before shot prior to going in the freezer.
Apparently I pinned a similar recipe many, many months ago and I think the
older one might be the recipe to go with. The older one calls for more powdered sugar and a little vanilla extract which is always nice. Here's an after shot of the pretzels in chocolate the next morning.
You may notice that two are gone. I tried one the night I made them after they chilled in the fridge for about 45 minutes and it still seemed un-set. Then I tried another one the next morning and it was really tasty and firm. It's best if they can stay refrigerated before eating. I would definitely make this again because there is no actual baking involved and the only prep work is letting the butter soften. Plus, Jeff really likes them. I hope everyone else has a chance to cook up some tasty treats for the holidays. I plan to make some Rice Krispie treats for Jeff but that's about it.
